Easy Gluten Free Pumpkin Muffins with Cream Cheese Frosting

One of my favorite parts of fall is pumpkin foods...or rather lots of autumn spices (they can go in lots more than just pumpkin food!).  Today I would like to share with you a glute free recipe for pumpkin muffins!  Or rather links to the recipes ;)  Enjoy!

The Muffins and The Frosting.  The only parts I changed was I sprayed the pan with Pam (since I didn't have muffin wrappers) and also the amount of spices... instead of what the recipe says, I used 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/2 tsp. cloves.  I hope this inspires you to get baking those delicious autumn goodies ;)

Fantastic Fridays // 10

Wow!  I seriously cannot believe I've already reached the tenth Friday since I started this series!  First of all I would like to know if anyone has jumped on board with this series, if not, would you like to?

This week has been interesting.  Yeah, not really, but interesting as in super busy!  I have a paper due (about Fahrenheit 451) that is kinda stressful, but the Fantastic part is seeing God inspire me what to write and showing me how to do it.  Other than that, my small group leader from youth group last year is getting married!  Sorry this post has to be so short!  Just keep checking up for some fall decor/recipe posts in the next few weeks!

What has been Fantastic about your week?

Pictures of the Week // 8

Pictures taken during a much needed study break.

Just to let you know, I will have no Fantastic Friday post today (yeah I'm posting pictures on a friday... weird I know.)  I'm leaving for a church retreat for this weekend so I have a good excuse ;) Hope you enjoyed the pictures!

Chocolate Book Tag

Hello everyone!  Today I have the Chocolate Book Tag.  I was tagged by Eve S.-- Thank you Eve!  I haven't really read too much lately, and I am trying to pry into my memory for all the different books that I've read.  Bear with me and let's jump right in!

1. Dark Chocolate (a book that covers a dark topic)
To Kill a Mockingbird... if you don't know what this is about, I will just say that there is not bird killing in it ^.^

2. White Chocolate (a light-hearted humorous read)
The Enchanted Castle by E. Nesbit.  This book tells the story of three early 1900 siblings (Gerald, Kathleen, and Jimmy) who have to stay at the boarding school for the summer with the "Mademoiselle"... and their Enchanted adventures at the Castle.  It is such a great book- very funny and realisticly fantastical!

3. Milk Chocolate (a book with a lot of hype that you really want to read)
I don't know, but I've heard from a lot of people that the Inkheart series are amazing... and I still haven't read them.  So maybe I will :)

4. Caramel-filled Chocolate (a romantic book)
The Fault in our Stars.  This was a really good book... yeah you just have to read it ;)

5. Wafer-less Kit-kat (a book that surprised you)
Calico Captive by Elizabeth George Speare.  This book I was assigned for a book report and at first I thought it was going to be super boring.  However after getting into it, I really loved it and also read two of Speare's other books: The Witch of Blackbird Pond, and the Bronze Bow.

6. Snickers (a book you are going nuts about)
There's actually no book that I'm going crazy about.  As I said earlier, I haven't had too much time to read lately.  So, sorry!  Nothing for this one :( (Although I do like snicker bars...)

7. Hot chocolate with mini marshmellows (a book you go to for a comfort read)
Little Women, or some of Louisa May Alcott's other books (Little Men, Jo's Boys, and Eight Cousins)

8. A Box of Chocolates (A series you feel has something for everyone)
Definitely Lord of the Rings Trilogy.  Yes it can get long at some points (Tolkien loves his description), however it has everything: Action, Romance, Adventure, and Mystery!

So! Right now I'm too lazy to tag someone... so the first five people who comment are tagged!

Fantastic Fridays // 9

Welcome to yet another Fantastic Fridays!  I was not able to post one last week due to many things, which I will go over in this post.

First of all this past week I had a five page research paper due for my writing class.  And of course I had all sorts of things going on the weekend of this paper.  These things included a sleepover (which I stayed up way too late during...) the night after which we had family over.  However it was Fantastic to see my cousins again and to be able to spend time with my friends at that sleepover.
This week however I have some especially Fantastic things this week.  My parents got me a phone!  Yes, it is my dad's old phone for now, but hey!  It's still a phone-- an unbreakable Nokia at that.
Lastly is the rain.  We've been getting so much rain lately and it's lovely!  Not only do I love to sit inside and hear the rain while drinking tea (yeah dramatic, I know), but also, I don't have to go out and water all our trees and plants scattered around our land!  Thank you God!  (especially since I have tons of homework this week!)
What has been fantastic about your week?
